I love turkey burgers but finding one that is delicious and juicy is harder than you’d expect! Most versions turn out too dry or mushy but not Barb’s.
Barb and I have been friends for years. Within months of meeting her, Barb would share print-outs of her favorite, tried and true recipes. I came to love these little print-outs, as it reminded me of recipes family members have shared in the past. This turkey burger recipe was written on a yellow sticky note and everyone who has tried it will attest – it’s a keeper!
YIELD: 6 Burgers
PREP TIME: 20 Minutes
TOTAL TIME: 30 Minutes
Prep the Burgers
- 2 packages of organic ground turkey
- 1 large egg
- 1 cup of panko
- 1/2 cup of grated zucchini
- 1 tbsp of Worcestershire sauce
- 1 tbsp of sriracha mayo
- 1 handful of freshly chopped Italian parsley
- 1 tsp of garlic salt
- 1/2 cup of grated cheese
- salt and pepper
Burgers:
- Combine all the ingredients in a large bowl. Careful not to overmix!
- Loosely form meat mixture into fist size meat balls. Set aside on a platter for grilling.
- Prep all of your delicious burger toppings and sauces. Set aside.
- Preheat iron skillet or griddle.
- Using melted butter, lightly brush your brioche buns and grill on a heated skillet until golden. Set aside.
- Place your burger balls on the hot griddle. Using a spatula, smash the burgers down to flatten to 1/3 inch patties. Edges will not be uniform. Make sure there is plenty of space between your patties.
- Cook for about 2-3 minutes until the edges start to crisp up and burger is about 2/3 of the way cooked.
- Flip the burger and finish cooking about 1-2 minutes more.
- Turkey burgers should be cooked all the way through, no pinkness.
- Transfer your delicious patties to one of your golden buns. Top with all the fixings!
