I have a big crush on avocados. I always have some in my fridge because they can be incorporated into almost any meal. Not only are they deliciously creamy, they are loaded with heart healthy fats, vitamins, fiber and have more potassium than bananas.
How this recipe came to be
When two of my good friends were visiting from California, I was looking for something simple to serve before dinner. I had all of the ingredients on hand to make this so, I just started experimenting. My friends liked it so much, that I now serve it all the time. It goes great with chips, veggies, tacos, in sandwich wraps or even on your eggs in the morning.
This dip is so easy to make and so, so good.
Ingredients
- 2 ripe avocados
- 1 large garlic clove
- 1/4 cup of fresh cilantro
- 1/4 c of plain yogurt
- 1/2 juice of 1 lime
- Pinch of cumin
- Salt to taste
Directions
Cut your avocados in half lengthwise and gently remove pit. Using your hand, squeeze 1/2 of each avocado into bowl.
Using a fork, mash your avocado up nicely. You can leave some chunks, if you prefer.
Finely mince your garlic clove and add it to the avocado mixture. Squeeze in the juice of 1/2 of a lime and add salt and cumin to taste.
Fold in your plain yogurt until well combined.
Add cilantro and place dip in your refrigerator to chill for 30 minutes before serving. You can leave the pit in the bowl to keep it from browning.
